Grain Free Teriyaki Meatballs

  • 1 pound grass fed ground beef

  • 1/2 yellow onion, diced

  • 1 cup sweet potato, grated

  • 1 tsp salt

  • 1/4 tsp black pepper

  • 1/4 cup teriyaki sauce

    • 1 cup cold water

    • 1/4 cup gluten-free, non-gmo soy sauce or coconut aminos

    • 1/4 cup orange juice

    • 1 tsp garlic powder

    • 1 tsp minced ginger

    • 3-5 tbsp honey, depending on desired sweetness

    • 2 tbsp tapioca starch


  • Preheat oven to 375.

  • Make teriyaki sauce- in a small sauce pan, combine all ingredients except tapioca starch. Heat over medium heat for about 1 minute, stirring constantly. Add tapioca starch and cook, continuing to stir, for 3-5 minutes or until sauce thickens. Set aside. You can add more honey as long as the sauce is still hot..

  • Mix ground beef, diced onion, sweet potato, salt + pepper, and 3 tbsp teriyaki sauce in a large bowl.

  • Form into meatballs using your hands and place evenly on parchment-line baking sheet.

  • Bake for 20-25 minutes, or until cooked through.

  • If eating immediately, warm the rest of the teriyaki sauce in a small sauce pan and brush over meatballs.

  • If meatballs have been made ahead of time, warm them in a medium sauce pan with extra teriyaki sauce.

  • Serve over cauliflower rice with a side of roasted broccoli.
