Gluten Free Chocolate Chip Cookies
- 1.5 cups Gluten Free Oat Flour
- 1 cup GF all purpose baking flour
- 1 cup organic sugar
- 1/4 cup arrowroot starch
- 1.5 tsp xantham gum
- 1 tsp baking soda
- 1 tsp salt
- 3/4 cup plus 2 tbsp melted coconut oil
- 2 eggs
- 1 cup gluten free, dairy free chocolate chips (Enjoy Life brand)
Preheat the oven to 325. Line 2 rimmed baking sheets with parchment paper and set aside.
In a medium bowl, whisk together the flours, sugar, arrowroot starch, xantham gum, baking soda and salt. Add the coconut oil and eggs and stir until a thick dough forms. Stir in the chocolate chips until evenly distributed.
Drop the dough by the spoonful onto the prepared baking sheets. Bake for 7 minutes, rotate the baking sheets, and bake for 7 minutes more, or until the cookies are golden brown and firm. Let stand on the baking sheets for about 15 minutes before eating.
