Gluten Free Chocolate Chip Cookies

Recipe adapted from Bob's Red Mill

  • 1.5 cups Gluten Free Oat Flour
  • 1 cup GF all purpose baking flour
  • 1 cup organic sugar
  • 1/4 cup arrowroot starch
  • 1.5 tsp xantham gum
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 cup plus 2 tbsp melted coconut oil
  • 2 eggs
  • 1 cup gluten free, dairy free chocolate chips (Enjoy Life brand)

Preheat the oven to 325. Line 2 rimmed baking sheets with parchment paper and set aside. 

In a medium bowl, whisk together the flours, sugar, arrowroot starch, xantham gum, baking soda and salt. Add the coconut oil and eggs and stir until a thick dough forms. Stir in the chocolate chips until evenly distributed.

Drop the dough by the spoonful onto the prepared baking sheets. Bake for 7 minutes, rotate the baking sheets, and bake for 7 minutes more, or until the cookies are golden brown and firm. Let stand on the baking sheets for about 15 minutes before eating.
