Sweet Potato Apple Breakfast Bake by 40aprons
Here is something you may or may not know about me: I am a RULE FOLLOWER. Sometimes I hate to admit that, but nevertheless, I embrace it. And, as with any character trait, it has its pros and cons.
When we decided to try sleep training with our 5 month old daughter, being a rule follower was a huge advantage. You gotta stick with the plan or it doesn't work! And guess what, within 3 days, she was sleeping like an angel. Still does, 2 months later (sidebar: The Sleepeasy Solution by Jennifer Waldburger and Jill Spivack. Life saving).

Being a rule follower also means that I am GREAT at following recipes. 99% of the time, I stick to the plan, and only occasionally experiment with different ingredients or methods. Which means most of my meals turn out great!
But you know what I suck at? Creating my own recipes! Seriously, I cannot wrap my brain around just grabbing a handful of ingredients and seeing what happens. Which makes me sad, because I know there is some serious fun to be had with that!
One day, I'll get over this fear. This is a life goal of mine, for real! One day, I'll be able to go to the grocery store without a list, buy whatever is in season and looks amazing, come home and create! I will do this for you. Until then, my friends, I will continue to share with you the most amazing recipes I find on the internets.
This is one of them. This turned out so good and is such a nice break if you ever get stuck in a breakfast rut.
Pro tip: When the finished product is ugly, take pics of the ingredients.
